ââ¬ÅTuslob Buwaââ¬Â is a pigââ¬â¢s brain and liver cooked with chilli, salt and other spices, sometimes complimented with shrimps. Tuslob Buwa literally means ââ¬Ådipping into bubblesââ¬Â. The name is derived from the description how it should be eaten: ââ¬ÅPuso (rice wrapped in palm fronds)ââ¬Â is dipped (ââ¬ÅTuslobââ¬Â) into the bubbling stew (ââ¬ÅBuwaââ¬Â).It is not exactly clear where the dish originated from but it is believed it was created as an appetizer in a local ââ¬Åcarenderiaââ¬Â or in the streets of Pasil, Cebu City more than 25 years ago.
