Traditional Portuguese style peri-peri chicken being prepared for grilling on a barbecue fire. Peri peri is a fiery sauce or marinade made from the birds eye chilli. It originated in Mozambique during the Portuguese colonial era and has now spread worldwide. The chicken is flattened out or spatchcocked and placed over the open red hot coals. It is continuously basted with the peri peri sauce while being turned. Once it is chargrilled and the outer skin blackened it is considered cooked.
