Ingredients: Basmati Rice long grain rice â 1 cup â 240 gms White radish â Grated â 1 cup Carrot â 1 cup Green peas â 1 3 cup White onion â sliced Mint leaves â 20 â chopped Coriander leaves â handful â chopped Cashew Nuts â 12 pieces Cloves â 2 Cinnamon stick â 1 inch piece Green Cardamom â 2 Bay leaf â 1 Mace â small piece Star anise â 1 2 piece Cumin seeds â 1 tsp Ginger garlic paste â 1 2 Tb sp Green chillies â 4 â slits Salt â 1 2 Tb sp Cumin Powder â 1 tsp Garam Masala Powder â 1 2 tsp Turmeric Powder â 1 4 tsp Coconut oil â 1 Tb sp ( you can use any cooking oil or butter) Water â 480 ml. Procedure: Wash basmati rice twice under running water and drain, keep it aside Take a heavy bottomed pan or nonstick pan and put on over medium heat Add cashew nuts, cumin seeds, cloves, Cardamom, cinnamon, bay leaf, Star anise and mace Saute 1 2 minute, add green chillies and ginger garlic paste Mix well and add sliced onions, sauté 2 minutes Then Add grated radish and cook 5 minutes and then add spices such as salt, turmeric powder, cumin powder and garam masala powder along with green peas Saute 30 secs and add chopped mint, cilantro and grated carrot Combine well and add water, let water boil and add basmati rice Gently mix and cook 10 minutes over medium heat and 10 mins on simmer. Sauté nicely in between 5 minutes Turn off heat and make sure rice cooked well Serve with Raita and crunchy potatoes chips.
