They are not true limes, but belong to a subspecies of the citrus family. It is the signature flavour that defines Thai cuisine world-wide, in particular Thai curries. The leaves are torn or finely shredded and used extensively to soups, curries or salads. The fruit is distinguished by their bumpy exterior and add an aromatic to the curry pastes. The tart citrusy juice and flesh are generally too acidic to use in cooking however, it can be used as a cleanser or added to shampoos.
