Bhindi Masala, a popular Indian dish made with okra (bhindi) and a variety of spices.Ingredients:Okra (bhindi), washed, dried, and choppedOnion, finely choppedTomatoes, finely choppedGinger-garlic pasteGreen chilies, slit (optional)Turmeric powderRed chili powderCoriander powderGaram masalaAmchur powder (dry mango powder)Mustard seedsCumin seedsAsafoetida (hing)Curry leavesOilSalt to tasteFresh coriander leaves for garnishPreparation Method:Heat oil in a pan or kadai. Add mustard seeds, cumin seeds, and asafoetida. Allow them to splutter.Add curry leaves and green chilies (if using). Sauté for a few seconds.Add chopped onions and sauté until golden brown.Add ginger-garlic paste and sauté until the raw smell disappears.Add chopped tomatoes and cook until they soften.Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and sauté for a minute.Add chopped okra and mix well. Cook covered on low to medium heat until the okra is tender, stirring occasionally to prevent sticking.Once the okra is cooked, add garam masala and amchur powder. Mix well and cook for another minute.Garnish with fresh coriander leaves.Serve hot with roti, naan, or rice.
