During the fermentation process, the soybean is placed inside the plastic ziplock. Tempeh is a traditional fermented Indonesian soy food, and prepared from soaked and cooked soybeans by salt-free aerobic fermentation using the mold Rhizopus. During the fermentation, dense cottony mycelium produced binds the soybeans together to form a compact cake. It is made of cooked soybeans bound together by a white mycelium of Rhizovus mold into compact cakes and is usually served as thin sliced and fried.
