Nutmeg and mace are two distinctly different spices obtained from a single fruit of an evergreen nutmeg tree The fruit is similar to apricot or peach. In the center of the fruit is seed, the seed has a red color aril, aril is surrounded by the flesh of the fruit. at maturity, the fruit crinkles up and splits in to two halves. scarlet colored aril (mace) surrounding the seed (nutmeg) is carefully separated and gently pressed flat. The mace is cut into strips about 1 long x ¼ wide. The mace and Nutmeg are sun-dried. on drying, scarlet color of Mace turn pale yellow, and becomes brittle.
